On the next few pages you will see the different types of apples that we use in our cider. Depending on the type of apple and the time of year what our blend of apples is, we use as many ten different types of apples to make our cider. The reason for the different types of apples is to keep the balance of acid and sugar or sweet and bitter fruit to make just the right mix. We blend our juice for many factors the most important of which are flavor, color, texture, and bouquet.
